采岩堂's main focus is on Sichuan wontons and noodles, but they also have a few other items. More specifically, 采岩堂 represents food from Chongqing City (重庆市), China, which is located in the Sichuan province. They've been in Taipei since 2003. I used to live really close to one of their two locations and ate there all the time. I felt very lucky to live so close to a delicious and cheap wonton and noodle eatery. I've tried many local wonton and dry noodle places and 采岩堂 is one of my favorites.
The biggest key to tasty wontons and noodles is the sauce. 采岩堂 has outstanding sauce from spicy to sesame flavor. Their wontons themselves are good, but the sauce makes it to die for if you're a spicy food lover. I like how the taste is not just spicy, but spicy with rich accompanying flavors from the other ingredients that are added to the hot sauce which is more like a pico de gallo- like sauce than a pasty or liquidy sauce. The sauce that they use with their dry noodles is also delicious. Dry noodles means that the noodles come with sauce, not soup. Therefore, the noodles are not actually dry; some dry noodle selections have quite a bit of sauce, like the spicy sesame noodles, making them closer to wet noodles ;) 采岩堂 also offers noodles in soup. If you can't decide between their delicious noodles or wontons, you can order any bowl of noodles and add five wontons to it for only NT$20 more, unless a noodle bowl is already listed with wontons on the menu, like the extreme spicy flavor noodles and wontons.
Two items I tried that I didn't include a picture of below:
Spicy Wontons (NT$50): They're good, but there is so much more flavor in the extremely spicy wontons, which aren't really extremely spicy (probably only a little spicier than the spicy wontons). I would rather get the extremely spicy wontons every time.
Acid & Spicy Wontons (NT$50): This is a nice option if you like the acidity of vinegar mixed with your spicy sauce. Again, I would rather order their extremely spicy wontons every time than any other wonton on their menu.
Vegetarian options: Both of these dry noodles are vegetarian: Noodle of Spicy Sesame Sauce and Peanut Flour (川味擔擔乾麵)(NT$50), Noodle of Extreme Spicy Flavor Wonton (doesn't include wontons, it means it's the same spicy sauce that comes with their wontons (怪味乾拌麵)(NT$60), Sweet Potato Leaves (燙青菜)(NT$40), Water Spinach (燙青菜)(NT$40), Spicy Dougan Strips side dish(麻辣豆干絲)(NT$40), Sweet & Sour Pickled Cucumber side dish (糖醋小黃瓜)(NT30), and there are other vegetables and side dishes that are vegetarian.
